Specials

Specials are temporary dishes offered outside the printed menu, used to feature seasonal ingredients, test new items, or move inventory.

How specials earn their place

A special might showcase a seasonal catch, use up product before it turns, or trial a dish the kitchen is considering adding. Because they are low-commitment, specials keep regulars curious and give the kitchen a fast read on demand.

They also need a margin. A special priced on instinct can quietly run a poor food cost, so the smart move is to cost and price it like any permanent item.

  • Showcase seasonal or limited ingredients
  • Test a candidate dish before adding it permanently
  • Move inventory before it loses value

Example

A seafood restaurant runs a daily catch special at market price. A strong-selling special with a clean margin becomes a candidate for the permanent menu at the next update.
